Broccoli-Cheddar Rice “Tots”

  • 2 cups frozen broccoli florets, defrosted, drained and finely chopped

  • 2 eggs

  • 1/2 cup plain bread crumbs

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon salt powder

  • Pepper to taste

  • 1/2 cup shredded cheddar cheese

  • Olive oil (for pan and tot-forming)

  • Ranch dressing or marinara sauce for dipping

  • Green Valley Long Grain Brown Rice

  • Green Valley Pinto Beans


  1. Preheat the oven to 400° F and oil a baking pan.

  2. Cook Green Valley Brown Rice according to the package instructions. Open pouch and put in the freezer to cool while you prepare the other ingredients.

  3. In a large bowl, whisk the eggs. Add chopped broccoli, pinto beans, bread crumbs, spices, and cheese.

  4. Add rice and stir to combine.

  5. Oil your hands and form heaping tablespoons into tot-shaped pieces by squeezing them in the palm of your hand. Spread tots evenly onto the prepared baking pan.

  6. Bake for 20 minutes, flipping tots half way.

  7. Serve warm with marinara sauce or ranch dressing to dip.

  8. Notes:You may use any combination of chopped broccoli or cauliflower, shredded carrots or zucchini, or other leftover vegetables you have on-hand
