Broccoli-Cheddar Rice “Tots”

  • 1 8.5oz pouch Green Valley Organic Long Grain Brown Rice

  • 2 eggs

  • 2 cups frozen broccoli florets, defrosted, drained and finely chopped

  • 1 15oz can or pouch Green Valley Organic Pinto Beans, drained and rinsed

  • ½ cup plain bread crumbs

  • ½ teaspoon onion powder

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon ground pepper

  • ½ cup shredded cheddar cheese

  • Olive oil

  • Ranch dressing or marinara sauce for dipping


  1. Preheat the oven to 400° F and oil a baking pan.

  2. Cook rice according to package instructions. Open and let cool.

  3. Whisk eggs in large bowl. Mix in broccoli, beans, bread crumbs, spices and cheese.

  4. Add rice and stir.

  5. Oil your hands and form heaping tablespoons into tot-shaped pieces by squeezing them in the palm of your hand. Spread tots evenly onto the prepared baking pan.

  6. Bake 20 minutes, flipping tots half way, until outside has browned and become crispy.

  7. Serve warm with dipping sauce.
