Avocado & Great Northern Bean Salad

Ingredients

  • 1 15-ounce can organic Green Valley Great Northern Beans

  • 1 avocado, pitted & chopped

  • 1 cup of cherry tomatoes, halved

  • ¼ sweet onion, chopped

  • 1 teaspoon fresh jalapeño, minced*

  • Chopped fresh basil to taste

  • Vinaigrette

  • 1½ tablespoons extra virgin olive oil

  • ¼ cup freshly squeezed lemon juice (about 2-3 lemons)

  • 1 teaspoon dijon mustard

  • ½ teaspoon garlic, finely chopped

  • salt & pepper to taste

Steps

  1. Whisk vinaigrette ingredients together, then pour over salad base and mix well. Refrigerate for a few hours before serving.

*Add as much or as little heat as you like!
