Avocado & Great Northern Bean Salad

Ingredients

1 15-ounce can organic Green Valley Great Northern Beans

1 avocado, pitted & chopped

1 cup of cherry tomatoes, halved

¼ sweet onion, chopped

1 teaspoon fresh jalapeño, minced*

Chopped fresh basil to taste

Vinaigrette
-
1½ tablespoons extra virgin olive oil

¼ cup freshly squeezed lemon juice (about 2-3 lemons)

1 teaspoon dijon mustard

½ teaspoon garlic, finely chopped

salt & pepper to taste

Steps

In large bowl, add all salad ingredients. DO NOT MIX YET.

In small bowl, whisk vinaigrette ingredients together. Pour over salad and mix well. Refrigerate for a few hours before serving.
*Add as much or as little heat as you like!
