Avocado & Great Northern Bean Salad

Ingredients

  • 1 pouch (15 ounces) Green Valley Organic Great Northern Beans, drained and rinsed

  • 1 avocado, pitted & chopped

  • 1 cup halved cherry tomatoes

  • 1 small sweet onion, chopped

  • 1 teaspoon minced fresh jalapeño

  • 1 Tablespoon chopped fresh basil

  • Vinaigrette

  • 2 Tablespoons extra virgin olive oil

  • ¼ cup lemon juice

  • 1 teaspoon dijon mustard

  • ½ teaspoon garlic powder

  • salt & pepper to taste

Steps

  1. In large bowl, add all salad ingredients. DO NOT MIX.

  2. In small bowl, whisk vinaigrette ingredients together. Pour over salad and mix well. Refrigerate for a few hours before serving.
