Avocado & Great Northern Bean Salad

  • 1 15-ounce can organic Green Valley Great Northern Beans

  • 1 avocado, pitted & chopped

  • 1 cup of cherry tomatoes, halved

  • ¼ sweet onion, chopped

  • 1 teaspoon fresh jalapeño, minced*

  • Chopped fresh basil to taste

  • Vinaigrette

  • 1½ tablespoons extra virgin olive oil

  • ¼ cup freshly squeezed lemon juice (about 2-3 lemons)

  • 1 teaspoon dijon mustard

  • ½ teaspoon garlic, finely chopped

  • salt & pepper to taste


  1. In large bowl, add all salad ingredients. DO NOT MIX YET.

  2. In small bowl, whisk vinaigrette ingredients together. Pour over salad and mix well. Refrigerate for a few hours before serving.

*Add as much or as little heat as you like!
