Black Bean and Portabella Mushroom Burgers with Caramelized Onions

Ingredients

  • For The Onions

  • 3 tablespoons unsalted butter

  • 2 yellow onions, thinly sliced

  • 1 teaspoon granulated sugar

  • ½ tsp kosher salt

  • For The Burgers

  • 2 tablespoons olive oil, divided

  • 2 tablespoons finely chopped garlic

  • 2 cups roughly chopped portabella mushrooms, gills and stem removed

  • 15 oz. can of Green Valley Organics Black Beans, drained and rinsed

  • 2 tablespoons Worcestershire Sauce

  • 1 tablespoon soy sauce

  • ½ lemon, juiced

  • 1 tablespoon chia seeds

  • 1 teaspoon kosher salt

  • ½ teaspoon onion powder

  • ¼ teaspoon dried harissa

  • ¼ teaspoon black pepper

  • 2 eggs, beaten

  • 3/4 cup panko breadcrumbs

  • 1/2 cup parmesan cheese, grated

  • 6 slices of tomato

  • 6 butter lettuce leaves

  • 6 brioche burger buns

Steps

Make The Onions:

  1. Melt the butter in a large sauté pan over medium heat

  2. Add the onions to the pan, stir to coat with butter, making sure they are in one even layer, let them cook undisturbed for 10 minutes.

  3. After 10 minutes sprinkle the sugar over top, gently stir to combine. Let them cook for another 10 minutes.

  4. Add the salt to the pan, stirring once more, and lower the heat, letting the onions cook for 20 minutes more undisturbed, until the onions turn a golden-brown color. Remove from heat and reserve for serving.

Make The Burgers:

  1. Heat 1 tablespoon of olive oil in a large sauté pan, over medium heat. Add the garlic to the pan, sautéing until fragrant, about one minute. Add the mushrooms to the pan and sauté until they soften, about 4 minutes. Remove from heat.

  2. In the bowl of a food processor add the mushrooms, black beans, Worcestershire sauce, soy sauce, lemon juice, chia seeds, salt, onion powder, harissa, and black pepper. Pulse until the mixture is well combined.

  3. In a large bowl beat 2 eggs and add the mushroom and bean mixture to the eggs. Then add the breadcrumbs and parmesan cheese. Mix well.

  4. In a large frying pan add 1 tbsp of olive oil over medium heat.

  5. Once the oil starts to simmer, using dampened hands (the mixture will stick to you if you don’t), scoop a 1/2 cup of mixture into the palm of your hand and gently shape into a burger patty.

  6. Place three patties in the oil and cook for 3-5 minutes per side or until golden brown and a crust has formed on each side. Repeat with remaining three patties.

Assembly:

  1. Add preferred condiment to the bottom of the burger bun, layer on a piece of lettuce, burger patty, slice of tomato, and top with desired amount of caramelized onions. Top with bun.
