Roasted Garlic Hummus

Ingredients

  • 1 head of garlic

  • 1 can or pouch (15.5oz.) Green Valley organic garbanzo beans

  • 1/4 cup tahini

  • 1 lemon, halved

  • Salt

  • Pepper

  • 1 tbsp. olive oil

  • Olive oil and paprika for serving

Steps

  1. Preheat the oven to 400 degrees F.

  2. Cut 1/4 inch off the top of the garlic head. Generously drizzle top of the garlic in olive oil, then sprinkle with salt and freshly ground black pepper. Loosely wrap garlic head in aluminum foil and roast for 40 minutes. Open the foil carefully and allow the garlic to cool.

  3. Meanwhile, drain garbanzo bean liquid into a small bowl.

  4. Remove all garlic cloves from the skins and add to a food processor. Add garbanzo beans, 1/2 of the drained liquid, juice from lemon, and tahini. Blend until smooth, adding more of the reserved liquid if needed. Season with salt and pepper to taste.

  5. Transfer hummus to a serving bowl and top with a drizzle of olive oil and a sprinkle of paprika. Enjoy!
