Pearl Couscous Salad

Ingredients

  • 2 cups pearl couscous, uncooked

  • 6 tablespoons extra-virgin olive oil, divided (2 tablespoons + 1/4 cup)

  • 1 pint cherry tomatoes, halved

  • 5 green onions, thinly sliced

  • 1 can (14.25 ounces) Green Valley Organic French-Cut Green Beans, drained

  • ¼ cup chopped fresh mint

  • 2 tablespoons chopped Italian parsley

  • ¼ cup white wine vinegar

  • 1 teaspoon kosher salt

  • ½ teaspoon freshly ground black pepper

Steps

  1. Bring a large pot of well-salted water to a boil over high heat.

  2. Add the pearl couscous and cook according to the package directions until tender.

  3. Drain the couscous and transfer it to a large bowl. Drizzle with 2 tablespoons of olive oil, toss to coat, and set aside to cool.

  4. In a separate large mixing bowl, combine the cherry tomatoes, green onions, green beans, mint, parsley, white wine vinegar, remaining 1/4 cup olive oil, salt, and pepper.

  5. Add the cooled couscous to the bowl and toss gently until all ingredients are evenly coated.

  6. Taste and adjust seasoning if necessary.

  7. Refrigerate until ready to serve.
