Pinto Beans with Bacon and Poblanos

Ingredients

  • 5 slices thick-cut bacon, chopped into 1/2” pieces

  • 1 poblano pepper, diced

  • 1/2 yellow onion, diced

  • 1/2 tsp kosher salt

  • 2 (15.5 oz) cans Green Valley Pinto Beans, drained

  • 1 1/4 cups water

  • 1 Tbsp hot sauce

  • 1/2 tsp sugar

  • 1 tsp apple cider vinegar

  • 1 Tbsp unsalted butter

Steps

  1. In a large skillet over medium heat, cook the bacon until it starts to crisp. Using a slotted spoon, remove the bacon, leaving the fat in the pan.

  2. Set the bacon aside, then add the poblanos and onions to the bacon fat. Sprinkle in the salt and stir. Cook, stirring occasionally, until the poblanos and onions have softened, about 10 minutes.

  3. Add in the pinto beans, reserved bacon, water, hot sauce, sugar, and vinegar. Bring the beans to a simmer and cook for 20 minutes, until the liquid has thickened.

  4. Taste and adjust salt if necessary. Stir in the butter to finish. Serve hot.
