Pumpkin Baked French Toast

Ingredients
1 whole loaf of brioche, french bread, or challah (stale is actually good here!)
1 can (15 ounces) Great Valley Organic Pumpkin
¾ cup white sugar
1 teaspoon cinnamon
2 teaspoon pumpkin pie spice
1 teaspoon vanilla
6 eggs
2 ½ cups milk
¼ cup turbinado or demerara sugar
⅓ cup toasted pecans

Cut the bread into 1” cubes.
Spray a 9×13” pan with cooking spray.
In a large bowl, mix together the pumpkin, sugar, cinnamon, pumpkin pie spice, vanilla, and eggs. Add the milk and stir to combine.
Add the bread cubes to the wet mix, stir until everything is evenly coated, then pour into the prepared baking dish.
Cover with plastic wrap and refrigerate overnight.
Preheat the oven to 350 F. Sprinkle the turbinado sugar and toasted pecans over the french toast bake.
Bake for 45 minutes, until the top is golden and crunchy and the french toast is set.
Serve with maple syrup.
