Ingredients

1 package (12 ounces) frozen lima beans

3 tablespoons unsalted butter, divided

1 sweet onion, diced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

Cook the lima beans: Bring a pot of salted water to a boil. Add the frozen lima beans and simmer for 10 minutes, until tender. Drain and set aside.

Sauté the vegetables: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the onion and cook for 5 minutes, stirring occasionally.
