Sweet Corn Panna Cotta

Ingredients

1 tablespoon unflavored powdered gelatin

1 ½ cup whole milk, divided

2 cup heavy cream

½ cup granulated sugar

4 tablespoons light brown sugar

2 teaspoon vanilla extract

1/4 teaspoon kosher salt

In a medium size bowl add sprinkle the gelatin over ½ cup milk. Let stand for 5 minutes.

In a small saucepan combine the remaining milk with the cream, both sugars, vanilla extract, and salt over a medium/low heat. Whisk until the sugars dissolve and the milk is warmed through. Add the warm milk mixture to the gelatin and stir until the gelatin dissolves.

Add the corn to a blender and pour the mixture over top. Blend until smooth.

Strain the puree through a fine mesh sieve into a large bowl, pressing down with a rubber tip spatula on the solids. Discard any solids in the sieve, then strain through once more.

Let panna cotta cool, stirring occasionally. After about 15 minutes, pour the panna cotta into the ramekins. Cover and refrigerate 4-6 hours, until firm.
