Sweet Pea & Garbanzo Bean Falafel

Ingredients
1 medium onion, quartered
3 cloves garlic
1 15oz can or pouch Green Valley Organic Garbanzo Beans, drained and rinsed
1 15oz can Green Valley Organic Sweet Peas, drained
½ teaspoon salt
1 teaspoon cumin
6 tablespoons flour (any kind)
1 teaspoon baking powder
1 tablespoon olive oil, plus more for forming balls
1 package pita bread
Tzatziki sauce
Lettuce, tomato, red onion, carrots, cucumbers or radishes for serving
Steps
If using oven: Preheat oven to 400° F
In a food processor, add onion, garlic, beans, peas, salt, cumin, flour and baking powder. Blend until well combined.
Drizzle 1 tablespoon olive oil on a baking pan and spread evenly with your hand or a paper towel.
Oil hands. Form 14-16 golf ball-sized balls of falafel mixture and arrange evenly onto pan. Flatten slightly to form patty.
Bake in oven 22-25 minutes, flipping half way, until tops are browned and crispy. Let cool 5 minutes. Or cook in air fryer at 400° F for 15 minutes, flipping halfway.
Let cool 5 minutes. Enjoy with pita bread, tzatziki sauce, and your favorite vegetables.
