Sweet Pea & Garbanzo Bean Falafel

  • 1 (15.5 oz) pouch organic Green Valley Garbanzo Beans, rinsed and drained

  • 1 (15 oz) can organic Green Valley Sweet Peas, rinsed and drained

  • 1/2 medium onion, quartered

  • 3 cloves garlic

  • 1/4 cup packed fresh cilantro leaves

  • 1 teaspoon salt

  • 1 teaspoon cumin

  • 6 tablespoons flour (any kind)

  • 1 teaspoon baking powder

  • 1 package pita bread

  • Olive oil for exterior


  1. Preheat oven to 400° F

  2. In a food processor, add onion, garlic, and cilantro. Pulse until well chopped.

  3. Add remaining ingredients (garbanzo beans, peas, salt, cumin, flour, and baking powder) and blend until well combined.

  4. Drizzle 1 tablespoon olive oil on a baking pan and spread evenly with your hand or a paper towel.

  5. Using a spoon or small ice cream scoop, form 14-16 golf ball sized balls of the falafel mixture and arrange evenly onto the baking pan.

  6. Pour olive oil on your hands, roll each ball, then flatten slightly to form a patty. Add additional oil to hands as needed.

  7. Bake for approximately 25 minutes, flipping the falafels half way. Let cool for 5 minutes.

  8. Enjoy with pita bread, tzatziki sauce, and your favorite vegetables like tomato, lettuce, red onion, carrots, cucumbers or radishes.
