White Cheddar & Hot Honey Air-Fried Corn Fritters

Ingredients

1 large egg

1/4 cup whole milk

1/2 cup all-purpose flour, plus more for thickening batter

1 teaspoon granulated sugar

1/2 teaspoon baking powder

1/2 teaspoon kosher salt

1/4 teaspoon cayenne pepper

1 15-ounce can Green Valley Organic Whole Kernel Sweet Corn, drained

1/2 cup shredded sharp white cheddar cheese

Olive oil, for drizzling (or cooking spray)

Hot honey, for garnish

In a medium bowl, beat the eggs and milk until thoroughly combined.

In a large bowl, whisk together the flour, sugar, baking powder, salt, and cayenne pepper. A little bit at a time, combine the wet ingredients into the dry, and then fold in the corn and the cheese. Add in about 1 tablespoon of flour at a time until the batter is sticky and no longer runny. Refrigerate for 30 minutes.

Place a layer of tin foil in the base of an air fryer basket, drizzle (or spray with oil) to prevent sticking, and preheat to 375°F.

Using a 1/4-cup measure as your guide (and working in batches depending on the size of your air fryer), dollop even-size amounts of the batter onto the foil. Drizzle or spray with oil and then air fry until golden and crispy on top, about 6-8 minutes. Carefully use a flat spatula to flip over each fritter and air fry until the other side is golden, about 4-6 minutes.

While the fritters are still hot, sprinkle the tops with a pinch of salt and drizzle with the hot honey. Serve warm.
