Avocado Pesto Pasta Salad

Ingredients

  • sea salt

  • 1 box (16 ounces) bow-tie pasta (Farfalle)

  • 1 jar (7 ounces) basil pesto

  • 1 can (15 ounces) Green Valley Organic Whole Kernel Corn, drained

  • 2-3 avocados, pitted and diced

  • 1 pint cherry tomatoes, halved

  • 1/2 cup chopped fresh parsley

Steps

  1. Bring an large pot of water to a boil and generously season with sea salt. Cook pasta according to package directions. Drain and rinse with cold water until cool.

  2. In a large bowl, add pesto and cooled pasta. Mix well.

  3. Add corn, avocado, tomatoes, and parsley. Mix gently until combined.
