Black Bean and Portabella Mushroom Burgers with Caramelized Onions

Ingredients
For The Onions
3 Tablespoons unsalted butter
2 yellow onions, thinly sliced
1 teaspoon sugar
1/2 teaspoon kosher salt
For The Burgers
3 Tablespoons olive oil, divided
2 cloves garlic, sliced
2 cups chopped portabella mushrooms
1 can (15.5 ounces) Green Valley Organic Black Beans, drained and rinsed
2 eggs, beaten
2 Tablespoons Worcestershire Sauce
1/2 teaspoon onion powder
1/4 teaspoon black pepper
3/4 cup panko breadcrumbs
1/2 cup parmesan cheese, grated
6 brioche burger buns
6 butter lettuce leaves
6 slices of tomato

Melt butter in a large pan over medium heat. Add onions, sugar, and salt. Stir to coat with butter, let cook undisturbed 10 minutes. Stir and cook an additional 10 minutes. Once onions are a golden-brown color, remove from heat and reserve for serving.
While onions are cooking, heat 1 tablespoon of olive oil in a second large pan over medium heat. Add garlic, cook 1 minute. Add mushrooms, cook 4 minutes, stirring occasionally.
Add cooked mushrooms to a food processor, along with beans, eggs, Worcestershire sauce, onion powder, and black pepper. Pulse until the mixture is well combined.
Add breadcrumbs and parmesan cheese. Mix well. Form mixture into 6 patties.
In a large frying pan heat remaining 2 tablespoons of olive oil over medium. Once hot, add patties (3 at a time). Cook 3-5 minutes per side, until golden brown crust has formed. Repeat with remaining patties.
Add preferred condiment to bottom of burger bun. Layer lettuce, burger patty, tomato slice, and caramelized onions. Top with bun.
