Jennifer Aniston’s Friends Quinoa Salad

  • 1 cup quinoa

  • 1 can or pouch (15.5 oz.) Green Valley organic garbanzo beans, drained

  • 1 cucumber, diced

  • 1/4 cup shelled pistachios

  • 1 lemon, halved

  • 1/4 cup crumbled feta

  • Chopped herbs, preferably mint or basil

  • Salt

  • Pepper

  • 2 tablespoons of olive oil

  • 1 small onion, diced

  • 1/4 cup crumbled feta

  • 12 cherry tomatoes, halved


  1. Cook quinoa by package instructions. Add an additional tablespoon of olive oil for flavor and texture.

  2. In a large bowl, add cooked quinoa, garbanzo beans, cucumber, onion, tomatoes, and pistachios. Sprinkle with salt and freshly ground black pepper to taste. Drizzle with olive oil and squeeze juice from the lemon. Mix well.

  3. Top with feta cheese and herbs. Enjoy!
