Kidney Beans with Chorizo and Peppers

Ingredients

  • 6 oz. Mexican chorizo

  • 1 yellow onion, diced

  • 4 cloves garlic, minced or pressed

  • 1 red bell pepper, diced

  • 1 poblano pepper, diced

  • 2 Tbsp tomato paste

  • 1/2 cup water

  • 2 (15.5 oz) cans Green Valley Dark Red Kidney Beans

  • 1 tsp kosher salt

  • 1/2 tsp cayenne pepper

Steps

  1. Place a large skillet over medium-high heat.

  2. When the pan is hot, add the chorizo and break it apart with a spatula. As the chorizo cooks, it should render out fat.

  3. After about 3-4 minutes, add the onions and peppers to the cooking chorizo and mix everything together.

  4. When the chorizo is fully cooked and the peppers and onions have softened (about 8-10 minutes), add the garlic and cook for one more minute, until fragrant.

  5. Add the tomato paste and 1/2 cup of water and stir together.

  6. Add the beans, salt, and cayenne pepper. Simmer the beans for 20 minutes, then remove from the heat.

  7. Serve over rice.
