Kidney Beans with Chorizo and Peppers

Ingredients

6 oz. Mexican chorizo

1 yellow onion, diced

4 cloves garlic, minced or pressed

1 red bell pepper, diced

1 poblano pepper, diced

2 Tbsp tomato paste

1/2 cup water

2 (15.5 oz) cans Green Valley Dark Red Kidney Beans

Place a large skillet over medium-high heat.

When the pan is hot, add the chorizo and break it apart with a spatula. As the chorizo cooks, it should render out fat.

After about 3-4 minutes, add the onions and peppers to the cooking chorizo and mix everything together.

When the chorizo is fully cooked and the peppers and onions have softened (about 8-10 minutes), add the garlic and cook for one more minute, until fragrant.

Add the tomato paste and 1/2 cup of water and stir together.

Add the beans, salt, and cayenne pepper. Simmer the beans for 20 minutes, then remove from the heat.
