Peanut Butter Black Bean Brownies

  • 1 15-ounce can organic Green Valley Black Beans

  • 2 tablespoons cocoa powder

  • ½ cup quick oats

  • ¼ teaspoon kosher salt

  • ½ cup honey

  • ¼ cup peanut butter

  • 2 teaspoons vanilla extract

  • ½ teaspoon baking powder

  • ½ cup chocolate chips (more chips for decoration)


  1. Preheat oven to 350 degrees F. Line an 8×8 pan with parchment paper and spray with cooking spray.

  2. In a blender or food processor, combine all ingredients (except the chocolate chips) and blend, making sure that beans are all pureed and smooth.

  3. Gently fold in half of the chocolate chips (about 1/4 cup).

  4. Pour into the parchment-lined 8×8 pan, making sure batter is spread evenly.

  5. Bake for about 15 minutes. Sprinkle remaining baking chips over the top (about 1/4 cup).

  6. Using the parchment, remove the brownies from the pan and let cool on rack at least 10 minutes before cutting.
