Pinto Beans with Bacon and Poblanos

Ingredients

  • 8 slices thick-cut bacon, diced

  • 1 poblano pepper, seeded and diced

  • 1 small yellow onion, diced

  • 2 cans (15.5 ounces) Green Valley Organic Pinto Beans, drained

  • 1 Tablespoon hot sauce

  • 1/2 teaspoon sugar

  • 2 teaspoons apple cider vinegar

  • 4 Tablespoons butter

Steps

  1. In a large skillet over medium heat, cook bacon about 10 minutes until crispy.

  2. Add poblanos and onions. Cook 5 minutes.

  3. Add beans, hot sauce, sugar, vinegar, and butter. Stir and cook 5 minutes, until butter has melted and bean mixture is creamy.
