½ yellow onion, diced

1 teaspoon kosher salt

3 cloves garlic, minced or pressed

2 pouches (15.5 ounces each) Green Valley Organic Great Northern Beans, drained

1 jar (24 ounces) marinara sauce

1 teaspoon dried oregano

½ teaspoon red chili flakes

⅓ cup grated parmesan cheese

3 cups lightly packed baby spinach

8 ounces grated part-skim mozzarella

Preheat the broiler: Position an oven rack in the top third of the oven and turn on the broiler.

Sauté aromatics: In a large, oven-safe skillet, heat the olive oil over medium-high heat. Add the onion and salt, and cook for 7–8 minutes, until softened and lightly browned. Stir in the garlic and cook for 1 more minute, until fragrant.

Simmer the beans: Add the Great Northern beans, marinara sauce, oregano, and chili flakes. Reduce the heat to medium-low and stir to combine. Simmer until bubbling, about 5 minutes.

Add cheese and greens: Stir in the parmesan cheese and baby spinach. Simmer for another 3 minutes, until the spinach is wilted. Taste and adjust seasoning if needed.

Broil to finish: Sprinkle the mozzarella evenly over the top. Place the skillet under the broiler and cook until the cheese is melted and browned in spots, 2–3 minutes.
