Ingredients
3 Tablespoons extra-virgin olive oil (divided)
1 pound prepared gnocchi (shelf-stable or refrigerated)
2 shallots, sliced
1/2 teaspoon kosher salt
4 cloves garlic, minced or pressed
1 can (15 ounces) Green Valley Organic Peas, drained
3/4 cup grated Parmesan cheese
1/4 cup chopped fresh basil
1/2 teaspoon ground black pepper

In a large skillet, heat oil over medium-high until hot. Add gnocchi and cook 6 minutes, stirring occasionally, until crisped and golden brown. Transfer gnocchi to a plate and set aside.
Return skillet to stove and add the remaining 1 tablespoon oil. Add shallots and salt, cook 5 minutes, stirring occasionally. Add garlic and cook 1 minute more.
Add peas, cooked gnocchi, Parmesan, basil, and black pepper. Toss together until evenly coated and heated through.
