Ingredients

  • 2 Tablespoons olive oil

  • 1 small yellow onion, diced

  • 1 teaspoon kosher salt

  • 3 cloves garlic, minced or pressed

  • 2 pouches (15.5 ounces each) Green Valley Organic Great Northern Beans, drained

  • 1 jar (24 ounces) marinara sauce

  • 1 teaspoon dried oregano

  • ⅓ cup grated parmesan cheese

  • 8 ounces shredded mozzarella

  • 1 Tablespoon chopped fresh basil

  • To serve: garlic bread

Steps

  1. Position oven rack in the top third of the oven and turn on broiler.

  2. In a large, oven-safe skillet, heat oil over medium-high. Add onion and salt, cook 6 minutes. Stir in garlic and cook 1 minute more.

  3. Add beans, sauce, and oregano. Stir together. Reduce heat to medium-low. Simmer 5 minutes.

  4. Stir in parmesan cheese.

  5. Sprinkle mozzarella evenly over the top. Place skillet under the broiler 2–3 minutes until cheese is melted and browned in spots.

  6. Remove from oven and top with basil. Let cool slightly before serving. Enjoy hot with garlic bread.
