Pumpkin Baked French Toast

Ingredients

  • 1 loaf brioche, french bread, or challah, cubed and dried

  • 1 can (15 ounces) Green Valley Organic Pumpkin

  • 3/4 cup white sugar

  • 2 teaspoons cinnamon

  • 1 teaspoon vanilla

  • 6 eggs

  • 2 ½ cups milk

  • 1/4 cup turbinado or demerara sugar

  • 1/3 cup toasted pecans

  • Maple syrup, to serve

Steps

  1. Preheat oven to 350°F. Spray a 9×13” baking dish with non-stick cooking spray. Set aside.

  2. In a large bowl, mix together pumpkin, sugar, cinnamon, vanilla, and eggs. Add milk and stir to combine.

  3. Add dried bread cubes to the bowl. Gently stir until well-coated. Pour into prepared baking dish and spread evenly.

  4. Sprinkle turbinado sugar and toasted pecans over mixture.

  5. Bake 45 minutes, until top is golden and crunchy.

  6. Serve with maple syrup.
