Pumpkin French Toast Bake

1 loaf brioche bread, cubed and dried

1 can (15 ounces) Green Valley Organic Pumpkin

3/4 cup white sugar

1 teaspoon cinnamon

2 teaspoons pumpkin pie spice

1 teaspoon vanilla

6 eggs

2 1/2 cups milk

1/4 cup turbinado or demerara sugar

1/3 cup toasted pecans

Coat a 9″x13” baking dish with non-stick cooking spray. Set aside.

In a large bowl, mix together pumpkin, sugar, cinnamon, pumpkin pie spice, vanilla, and eggs. Add milk and stir to combine.

Add bread cubes to the wet mix. Stir until evenly coated, then pour into prepared baking dish.

Cover with plastic wrap and refrigerate overnight.

Preheat oven to 350°F. Sprinkle turbinado sugar and toasted pecans over the french toast bake. Bake 45 minutes, until top is golden and the french toast is set.
