Shepherd’s Pie

Ingredients

  • 2 tbsps olive oil

  • 1 medium onion, preferably yellow or white, diced

  • 3 garlic cloves, minced

  • 1 ½ lb. 80% lean ground beef - or ground lamb

  • 1 tsp salt

  • 1/2 tsp ground black pepper

  • 1 tbsp all purpose flour

  • 1 tbsp Worcestershire sauce

  • 1 tbsp tomato paste

  • 1 cup chicken stock

  • 1 cup Green Valley organics peas, drained

  • 1 cup Green Valley organic Whole-Kernel Corn, drained

  • Fresh rosemary

  • Fresh thyme

  • Mashed Potato Topping:

  • 4 large. russet potatoes, peeled and cut in quarters

  • 8 tbsps unsalted butter (1 stick)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp salt

  • 1/4-1/2 cup milk of choice

Steps

  1. Preheat the oven to 400 degrees.

  2. If you haven’t already done so, prep the veggies. Dice the onion and peel and quarter the potatoes.

  3. In a large pot, cover the potatoes in water and bring to a boil.

  4. Meanwhile in a large pan over medium heat, add some oil and sauté the onions until translucent, about 3 minutes. Add the garlic and continue to stir until fragrant. Add the meat of choice and season with salt and pepper. Cook the meat for about 3-5 minutes until it has browned a bit. Add flour and stir so the meat is well coated. Add the chicken stock, tomato paste, Worcestershire sauce, and herbs and bring to a boil. Once boiling, lower the heat and allow to simmer for about 13-15 minutes.

  5. While the meat is simmering, check on the potatoes. Once tender, strain the water. Add the butter, garlic and onion powders, salt, and dash of milk to the potatoes and stir with a fork until potatoes are mashed but still a bit chunky!

  6. The meat mixture should have reduced a bit now and the sauce has thickened. Turn off the heat and add the peas and corn. Mix until well incorporated.

  7. Using a casserole dish, add the meat mixture to the dish then carefully cover with mashed potatoes. Please ensure the corners and sides are well sealed with mashed potatoes otherwise the meat sauce will bubbly up and over!

  8. Bake for 25 mins. If looking for a crispy potato top, turn the oven to broil and cook for another 5 minutes.
