Street-Style Vegetarian Gyros

Ingredients

  • 1 can (15.5 oz) Green Valley Organic Garbanzo Beans, drained and rinsed

  • 2 garlic cloves, minced

  • 1 tablespoon extra-virgin olive oil

  • 2 teaspoon oregano

  • 1 teaspoon cumin

  • 1 teaspoon onion powder

  • 1 teaspoon rosemary

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • ½ teaspoon dried marjoram

  • 4 Pita bread

  • ½ cup store-bought Tzatziki sauce

  • 1 cup chopped romaine lettuce

  • 1 tomato, chopped

  • 1 small red onion, halved and sliced thin

  • ½ cup halved pitted kalamata olives

  • 1 cucumber, seeded and chopped

Steps

Roasting Chickpeas

  1. Preheat oven to 425°F and line a rimmed baking sheet with parchment paper.

  2. Place garbanzo beans onto a kitchen towel, and pat dry. Remove any loose skins. Add garbanzo beans to mixing bowl with garlic, oil, oregano, cumin, onion powder, rosemary, salt, pepper and marjoram. Mix until coated.

  3. Place the garbanzos beans on the prepared baking sheet in a single layer.

  4. Bake for 30 minutes until the garbanzo beans become golden brown.

Gyro Assembly

  1. Spread 2 tablespoons Tzatziki Sauce on one pita. Add ¼ of the roasted garbanzo beans on top.

  2. Finish with ¼ of all the toppings: lettuce, tomatoes, onion, olives, and cucumbers. Repeat with the remaining pitas and ingredients.

  3. Fold pitas and enjoy!
