Breakfast Burritos

Ingredients

  • 8 slices bacon

  • 4 eggs

  • 1/2 teaspoons kosher salt, divided

  • 1/4 teaspoon black pepper

  • 2 Tablespoons olive oil

  • 1/2 yellow onion, thinly sliced

  • 1 poblano pepper, thinly sliced

  • 1 can (15.5 ounces) Green Valley Organic Pinto Beans, drained

  • 4 burrito-size flour tortillas

  • 1/2 cup shredded sharp cheddar cheese

Steps

  1. Preheat the oven to 400°F. Lay bacon slices on a baking sheet in a single layer. Bake about 20 minutes until crispy.

  2. While bacon is cooking in the oven, whisk together eggs, salt and pepper in a large bowl. Set aside.

  3. In a skillet, heat oil over medium-high. Add onion and poblano. Cook 3 minutes, stirring occasionally. Stir in pinto beans. Cook 4 minutes until heated through. Transfer bean mixture to a bowl.

  4. Return skillet to stove and pour in egg mixture. Cook 3 minutes, stirring gently, until set. Remove from heat.

  5. Lay tortillas on a clean work surface. Divide bean mixture, scrambled eggs, and cheese evenly among them. Top each with 2 slices of bacon.

  6. Roll each tortilla into a burrito, folding in the sides as you go. Serve hot.
