Pea & Mint Pesto Crostini

Ingredients

1 Can (15 oz) Green Valley Organic Peas

2/3 cup Mascarpone cheese

½ cup Packed mint leaves

2 Cups Cloves garlic, roughly chopped

2 tablespoons Lemon juice
-
2 tablespoons Grated Parmesan cheese

4 Radishes, thinly sliced (optional)

1-2 French baguette (depending on size), sliced about ½ inch thick

1 Large garlic clove, halved

4 tablespoons Olive oil
Steps

Preheat the oven to 400 degrees.

Place the slices of bread on a baking sheet lined with parchment paper.

Cut the garlic clove in half, rub the cut side of the clove onto the top of each piece of bread.

Brush tops of bread with olive oil and place in the oven for about 10-minutes, or until they become golden brown. Remove from the oven and let cool.

Meanwhile, in a food processor blend the Green Valley Organic Peas, mascarpone, mint, garlic, lemon juice, olive oil, Parmesan cheese, salt and pepper until smooth.

Spread 1-2 tablespoons of the prepared pea pesto to each slice.

Top with radish slices and a drizzle of olive oil, if desired.
