Preheat oven to 350° F. Coat a 9×5” loaf pan using butter or non-stick cooking spray.

Make the salted maple butter: In a small bowl, Add butter, maple syrup, and salt. Stir until well combined and refrigerate.

Make the bread: In a small bowl, mix together flour, baking powder, baking soda, and salt.

In a large bowl, whisk together eggs, sugar, and pumpkin. Add oil, vanilla, orange zest, and cinnamon. Stir until smooth.

Add the dry mix to the wet mix and stir until combined. Do not overmix. Add the batter into prepared loaf pan and smooth top with a spatula.

Sprinkle the pepitas evenly on top of the batter.

Bake 45-55 minutes, until a toothpick inserted into the center comes out clean. Cool bread in the pan for 10 minutes, then finish cooling on a rack.
