1 3/4 cup flour

1 1/2 teaspoons baking powder

1/2 teaspoon fine sea salt

1/2 cup vegetable oil

2 eggs

1 cup white sugar

1/2 cup brown sugar

1 teaspoon vanilla

Zest of 1 orange

1 teaspoon cinnamon

Preheat oven to 350 F.

Make the salted maple butter by combining the softened butter, maple syrup, and salt in a small bowl. Stir until well combined and set aside.

Grease a 9×5” loaf pan using butter or cooking spray.

In a small bowl, mix the flour, baking powder, baking soda, and salt.

In a large bowl, whisk together the eggs, both sugars, and pumpkin.

Add the oil, vanilla, orange zest, cinnamon, and pumpkin pie spice to the egg mix. Stir until smooth.

Add the dry mix to the wet mix and stir until combined. Do not overmix.

Scrape the batter into the prepared loaf pan and smooth the top with a spatula.

Sprinkle the pepitas evenly on top of the batter.

Bake for 45-55 minutes, until the loaf springs back gently and the center is baked. Check for doneness by inserting a toothpick into the center – it should come out clean or just with a few crumbs, not wet with batter

Cool the loaf in the pan for 10 minutes, then finish cooling on a rack.
