  • ½ yellow onion, diced

Steps

  1. Cook the onions: In a large skillet, heat the vegetable oil over medium heat until shimmering. Add the diced onion and cook, stirring occasionally, until softened and beginning to brown, about 7–8 minutes.

  2. Add aromatics and spices: Stir in the garlic and cook for 1 minute, until fragrant. Add the cumin, chili powder, smoked paprika, and salt, and cook for 30 seconds to bloom the spices.

  3. Add the beans: Stir in the drained Green Valley Organic Black Beans along with ½ cup of the reserved bean liquid. Bring to a gentle simmer and cook for 10 minutes, stirring occasionally.

  4. Mash the beans: Using a potato masher or the back of a fork, mash about three-quarters of the beans, leaving some whole for texture.

  5. Adjust consistency: Continue to cook until the beans reach your desired thickness. For a creamier texture, add more reserved liquid a few tablespoons at a time. For thicker beans, cook a few minutes longer to reduce.

  6. Serve: Taste and adjust seasoning if needed. Serve warm as a side dish, taco filling, or dip.
