Spinach, Fruit and Bean Salad

Ingredients

  • Lemon Vinaigrette:

  • 1/4 cup extra-virgin olive oil

  • 1 lemon, squeezed

  • 1 small shallot, minced

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon ground black pepper

  • Salad:

  • 1 package (5-6 ounces) baby spinach

  • 1 apple (Honeycrisp, Pink Lady, or another tart-sweet variety), thinly sliced

  • 1 can (15.5 ounces) Green Valley Organic Garbanzo Beans, drained

  • 1/4 cup dried cherries

  • 1/4 cup roasted walnuts

Steps

  1. In a small bowl, whisk together oil, lemon juice, shallot, mustard, honey, salt and pepper together until well combined.

  2. In a large bowl, layer spinach, apples, beans, cherries, and walnuts.

  3. Pour the vinaigrette over salad when serving.
