1 lemon, squeezed
1 small shallot, minced
1 teaspoon Dijon mustard
1 teaspoon honey

Salad:
1 package (5-6 ounces) baby spinach
1 apple (Honeycrisp, Pink Lady, or another tart-sweet variety), thinly sliced
